I thought it was supposed to stop poison, the status?

Only poison property attacks.

Since, I've seen sins use venom duster in prison poisoning the zombie prisoners (undead)

Yet, if you use enchant poison, you do no damage

Poison armor does that. Not ED.
ED just takes no damage from poison prop.
