Which category do i put my ticker under if i dropped my suiken ?

and how long does it usually take for gms to recover the item

Put it under "Lost Items/Scams"

As far as how long it will take, there is no usually. Every item recovery ticket is different, and some can be done in a matter of days, some weeks, and some take months. It just depends on both how complicated your case is, and how back-logged the tickets are at the moment.

The guy who picked up my suiken told me that the gms reversed all the trades that he made and they have my suiken.
I'm not sure if he is lying or not

Is it possible that a gm reversed all the trades that and take the suiken and keeping it until they see my ticket?

I'd almost guarantee you that the guy is lying.

If you haven't submitted the support ticket yet, you need to do that ASAP. Time is of the essence, and notifying the GMs of an item recovery within the first 24 hours is actually part of the item recovery guidelines. Failing to do that may result in more work for the GMs (and more work generally = more time it takes to complete the ticket), and possibly an increased recovery fee (if a fee is required for your case).

Oh, i already made a support ticket on the day that i dropped it. I didn't get a response so i thought i put it in the wrong category

Hmm then he is probably trying to get a dbs mjol with my suiken now. I doubt that he would return it if i asked
