i think im blind but i cant find the old man to start the quest :'( can some one help me? or was i suppose to do something before coming to the monestry (already job lvl 40)

In this server you don't need to go the quest. There's a job changer NPC located in south west of the fountain in Prontera, or all the way north of save point in Alberta.
