from head to toe, what are the best gears for niffing?

You asked for the best gears, those are probably the best. But seriously, there's no need to get all that. And I don't think anyone on this server even has a +10 Valk armor or +10 Mjol.
As for Valk manteau, the reflect might be good or bad, I thought that it might kill some mobs halfway through and I'd lose the loot. But well Valk manteau will do fine too xD

Standard Niff gears
Kahos
BK something
PCB
BAthory/disguise/garm something. The carding is more of a preferance, I'd go for bathory
Tirifing/khalitz Buckler
Eddga boots or shoes
Devi manteau
DBSS MAce
Celebs/spring rabbit clips/something else.

Those gears will do you fin, more overups are of course always better.

What I use are
Kahos
BK ewe
Garm Glit Jack
Tirfing/High Orc guard
Eddga shoes
Devi muff
DBSS mace
Spring rabbit/mimic clips

Pretty much along the lines of what aozora said with some minor adjustments.
I have a preference for all my gears to be universal so it's guard/shoes/muff for me.

Shield
Instead of eddga or tirfing, you can try an ancient mummy card which has a chance of casting signum crucis which lowers the surrounding monsters' defense.
I use battle mode in nif to switch high orc and tirfing around. The high orc is so i don't lose my mob since technically I am doing damage to them as they attack me. I hate having to turn around and whack my mob a few times so i don't lose it. When I have a decent sized mob, I switch to tirfing to reduce the damage since generally you reiceve more damage standing still.

Accessories
One spring rabbit is needed. A second is kind of a waste. I had 2 before and then i decided to try out 1 and liked it better due to the fact you get another slot to equip something else which brings me to the mimic clip. I use mimic because I like the gamble of opening boxes x: Sometimes I get usefull stuff such as bucklers, guards, slotted armor and if I'm lucky, slotted sunglasses :3
